Chill the fat overnight so that it is easy to cut. Grind the fat in a meat grinder or food processor or cut it into small dice. Place the fat and ½ cup of water in an uncovered Dutch oven and heat over low heat for 3 to 4 hours, until the water has evaporated, the fat has melted, and any meat or skin has browned. Strain through a double thickness of cheesecloth to separate the liquid fat from the browned bits (see box). Pour the fat into heatproof jars or loaf pans lined with parchment, if you would like to have sliceable slabs. Allow to cool to room temperature and store in the refrigerator for 3 months or freeze for up to 1 year.
